Homemade No Bake Cookies

These No Bake Cookies are my family’s absolute favorite cookies!! These are one of those cookies that are always on the counter ready for those cookie monsters to come snag a bite. Now, I know they are not the healthiest but if you are like my husband, they are the perfect dash of sweetness after a meal.

Honesty is My Specialty

This is one of those recipes that I got from my husband’s family cookbook. Where they got the recipe, I’m honestly not sure but that might be an interesting question to ask because now I’m genuinely curious. I have had several people tell me that this is a very “old timey” recipe. I am not sure what that exactly means so if you do know I would love to hear about it in the comments.

Here is me just being honest again and serving you to the best of my ability…

Now, onto the Recipe!!!

Ingredients

  • 2 Cups Sugar
  • 1/2 Cup Cocoa Powder
  • 1/2 Milk
  • 1 Cup Butter (Softened)
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Peanut Butter
  • 3 Cups Oats
  • 1 Cup Shredded Coconut Flakes

Instructions

  1. Add the Sugar, Cocoa Powder, Milk and Butter to medium saucepan.
  2. Bring it to a boil and let it boil for about 1 minute. Then remove it from the stove.
  3. Add in the Vanilla, Peanut Butter, Oats, and Shredded Coconut.
  4. Mix together until well combined.
  5. Let the mixture cool just slightly. You should be able to scoop it with a spoon.
  6. Lay out some parchment paper on the counter.
  7. Scoop small spoonfuls into the parchment paper forming cookie shapes.
  8. Let them sit until completely cooled. Then move into storage container.

Storage Tips

When it comes to storing no bake cookies, you will want to keep them sealed. The less air its exposed to the better. This prevents the cookies from drying out. Here is a great sealable “Cookie Jar” option.

How Long Do They Last?

Normally, they do not last long enough for me to get an accurate “best buy” date. My husband usually eats 2-3 per night so it takes us little over a week to go through all the cookies.

This recipe usually makes about 24 cookies depending on how big you make them. If you don’t think you will eat that many within a couple of weeks, I suggest cutting the recipe in half. I have noticed that if they sit for too long, the sugar gets grainy or dry but not sure exactly how long it takes for that to happen.
